One of our favourite desserts is ice cream. So, of course, we wish to be able to enjoy it worry-free any time we feel like it. Nice cream is able to provide this option for us, since it only contains whole food ingredients.
What is Nice Cream?
Nice cream is a rich and tasty whole food plant based (vegan) ice cream that contains no refined sugar or dairy. It is made by blending frozen fruit like bananas or berries in a food processor or a high speed blender. It is creamy and tasty, can be made with different ingredients to achieve many flavours and is very simple and easy to prepare. Today’s choice is a Pistachio Nice Cream.
How to make Pistachio Nice Cream?
For this recipe you will need to cut bananas in smaller pieces and freeze them for at least 2-3 hours or even better overnight. Choose bananas that are very ripe since they will be sweeter that way. We are making pistachio flavour this time, so you will need to shell and rinse the pistachios to remove any salt, in case they are salted. You may add vanilla extract or pure vanilla powder for more deliciousness and matcha powder in order to enhance the green colour. Just keep in mind that matcha contains caffeine so skip it if you are wanting to keep this ice cream caffeine-free.
How to serve Pistachio Nice Cream?
After you blend everything well, you may serve it immediately for a soft-serve ice cream. Another option is to place it in the freezer for one to two hours to get a more firm consistency. If you let it sit longer than that, it will have to be slightly defrosted before scooping.

- Shell the pistachios and rinse them to remove any salt in case they are salted.
- Put the frozen bananas, pistachios, and vanilla into a food processor. If you want to avoid pistachio pieces in the ice cream, grind the pistachios separately and then add them.
- Optionally, add matcha powder to enhance the green colour. Keep in mind that matcha tea contains a high level of caffeine, so if you’re making ice cream for children or trying to reduce caffeine intake, you can skip this step.
- Process until you get a creamy texture.
