This vegan chocolate oat pudding recipe comes to the rescue! 🙂 Best of all, we won’t sacrifice the taste. Tested on other people’s children! 😀 I say that because my children are used to my healthy desserts and are therefore much more tolerant 😉 and used to less sweet “sweets”. I sweetened this pudding with dates and oat milk – no added sugar. Oats give it thickness, cocoa and vanilla give it chocolate taste, and almond butter and a blender make all those ingredients perfectly creamy. It is very practical that you can try the taste after blending and adapt the recipe to yourself – for example add a few more dates or more cocoa. A great recipe to prepare together with your youngest family members – include them at least as testers.

- Start by grinding the rolled oats in a blender until you get a flour-like texture.
- Add the pitted dates, cocoa powder, and initially half a litre of oat milk to the blender. Blend everything into a smooth mixture. Add the remaining oat milk and blend until the mixture is uniform.
- Once the pudding has thickened, add the vanilla and almond butter, and mix well.
- While it’s still warm, pour the pudding into four small bowls and sprinkle shredded coconut and grated dark chocolate on top.
- Serve warm or cold. Allowing it to cool a bit will result in a firmer pudding, while serving it warm will be more liquid.
