When I’m short on time, but still want something tasty and nutritious, this is my go-to recipe. You will get all the best flavours here: the creaminess of the avocado, crunchiness of pak choi, juiciness and smokiness of jackfruit in a sauce and sweetness of cherry tomatoes. All that on top of a rich, whole grain bread. Yum! 🥬😍
I just love a good sandwich. It is so easy to make, but you don’t have to sacrifice the taste or the nutrition. Here I am using my favourite green – pak choi, but you may replace it with the green of your choice. It was so fun making this recipe, and I love the colours. Jackfruit in its sauce is so tasty, that I make the same recipe to prepare it when I wish to use it in other dishes too. The whole grain bread makes it even more satisfying and satiating. You can use any whole grain bread of your choice, but I am also planning to create and link a recipe to a whole grain square shaped pumpkin seeds buns.
P.S. It looks nicer if you use the green part of Pak Choi, but don’t throw away the stems! Dip them in Hummus (recipe coming soon – I will link it here). 😋
Jackfruit Pak Choi Sandwich

For the sandwich
Instructions
- Drain Jackfruit from water and use your fingers or a fork to divide it into small stripes.
- Put Jackfruit into a small pot on a medium heat and add vegetable broth powder, soy sauce, tomato paste, pepper, and all three paprika powders.
- Mix everything and heat for about 5 minutes. Add a couple of tablespoons of water to prevent sticking. After everything is heated and spices are well mixed, remove from the stove.
- Peel avocados and remove seeds. Put them in a bowl, add a pinch of salt and mash them with a fork.
- Wash Pak Choi and cut cherry tomatoes in halves or thirds.
- On each piece of bread, spread a bit of mashed avocados, then put some PakChoi and top with Jackfruit and cherry tomatoes.
