I often prepare this stew when we travel somewhere where there is a kitchen ;). It is so easy to make. Ingredients are not difficult to find and to prepare. It’s delicious while still being light. We all enjoy it very much.

It never disappoints and everyone is always happy to eat it. It is very light, so serve it with some whole grain bread and salad to make it more complete and filling.

Equipment
- 1 Large Pot
Ingredients
- 1 head of white cabbage
- 4 carrots
- 4-5 medium potatoes
- 4 cloves of garlic
- 2 leeks
- 250 g red lentils
- 1 litre of tomato sauce
- 3 teaspoons of salt
- 3 teaspoons of soup seasoning
- 1 teaspoon of sweet paprika
- ½ teaspoon of smoked paprika
- a little black pepper
- 1 tablespoon olive oil optional
Instructions
- Wash all the vegetables and cut them into small cubes. Transfer them to a large pot.
- Rinse the lentils well and add them to the vegetables.
- Pour in the tomato sauce and add just enough water to cover all the vegetables and lentils.
- Add all the spices and cook until the potatoes and cabbage soften (around 30 to 45 minutes).
- Optionally, after everything is cooked and turned off, add olive oil for extra flavour.
Tips and Info
The quantity was sufficient for two meals for all four of us (though it’s quite light, so you’ll need to eat a substantial portion to feel full 😊). Serve with whole-grain bread and a tomato salad.
