Summer is nearing its end, but the sun is still shining and we all crave healthy and tasty (in other words kind and tasty 😉) ice cream. Since someone very dear to me gifted me a full bag of homegrown walnuts, this ice cream tastes like friendship, summer and self love. 😍🍨
I am always impressed how something so simple can taste so good. And it brings me great joy to make my desserts as healthy as possible. I am always up for enjoying good food, and I believe that food is much more than being healthy or unhealthy. This recipe (and hopefully all my recipes on this blog) is proof that you don’t need to risk enjoyment for health, you may have both. 😃
Ice cream with only natural ingredients
For this delicious walnut-banana ice cream, I use only natural ingredients, and no refined sugar or oils. It contains only three ingredients: banana, walnuts and a bit of vanilla powder. There is nothing in there to make you feel bad after eating it. It is still a dessert, so I recommend eating it after a meal, to avoid sugar spikes, especially if you are sensitive.
Ideas to switch it up
You may even play a bit with the ingredients. I used walnuts since they have high omega-3 fatty acids content, but you may switch it up with almonds or hazelnuts. Delicious Healthy Walnut-Banana Ice Cream: Vegan, Sugar Free
Equipment
- Food Processor
Ingredients
- 5 ripe bananas medium size
- 100 g ground walnuts plus some chopped walnuts for decoration
- 1/2 teaspoon vanilla powder
Instructions
- Cut five ripe bananas into small pieces and freeze them overnight or at least for 3 hours. Make the pieces as small as posible to make it easier for your food processor later on.
- Use already ground walnuts or grind them in a blender.
- In a food processor, combine the frozen banana pieces, ground walnuts, and vanilla. Mix everything until you have a smooth mixture.
- Serve with small chunks of walnuts on top for decoration.
