Wash the kale and separate it from the stems. You can save the stems for use in another dish, like soup.
Chop the leaves into small strips and transfer them to a large bowl. Use clean hands to "massage" the kale until it softens and reduces in size by about 50%.
Add pumpkin seeds, ground flax seeds, and sesame seeds.
In a small jar, combine mashed garlic, vinegar, oil, and salt. Close the jar and shake well. Pour the dressing over the kale and seeds and massage everything once more with your hands.
Peel the mango, remove the pit, and dice it. Add it to the salad and gently mix everything.
